Method

  1. Rinse the paper filter and pre-heat the brewer. Add 30 g medium-fine coffee and make a well in the center.
  2. 0:00 — Pour 60 g water for the bloom. Swirl vigorously to wet all grounds. Wait 45 s.
  3. 0:45 — Pour to 300 g in 30 s, keeping the stream steady and avoiding the filter walls.
  4. 1:15 — Pour to 500 g in 30 s.
  5. 1:45 — Stir once clockwise and once counter-clockwise with a spoon to knock grounds off the wall.
  6. Let it drain a little, then give the brewer a gentle swirl to flatten the bed.
  7. Target finished drawdown around 3:30. Adjust grind coarser if it takes much longer.

A high-ratio, high-temperature pour over that leans on a single agitation step for even extraction. Very forgiving with light, dense washed coffees.
