Method

  1. Place a wave filter in the brewer, rinse well and discard the water.
  2. Add 20 g medium coffee. Bloom with 50 g water for 30 s.
  3. Pour to 160 g in small circles by 1:00.
  4. Pour to 240 g by 1:45, then to 320 g by 2:30.
  5. Drawdown finishes near 3:20. The flat bed keeps extraction uniform.

A flat-bottom brewer is more forgiving than a cone. Three pulses keep the slurry temperature stable and give a rounder, sweeter cup.
