16-Hour Cold Brew Concentrate

Method

  1. Grind 100 g coffee very coarse. Combine with 800 g room-temperature filtered water in a jar.
  2. Stir to ensure all grounds are wet. Cover.
  3. Steep 16 hours at room temperature (or 20–24 h in the fridge).
  4. Strain through a paper filter or fine cloth.
  5. Dilute 1:1 with water or milk over ice. Keeps 7–10 days refrigerated.

Cold water extracts slowly and selectively: low acidity, low bitterness, big chocolate. Concentrate lets you set strength at serving time.
