No-Plunge French Press

Method

  1. Add 30 g coarse-ground coffee to a pre-heated press. Pour 500 g water just off the boil.
  2. Do nothing for 4 minutes.
  3. At 4:00, stir the crust gently to break it, then skim off the foam and floating grounds with two spoons.
  4. Wait another 5–8 minutes for fines to settle.
  5. Place the plunger just on the surface — do not press. Pour slowly, stopping before the sludge.

Long steep, no plunging. Skimming and settling remove most of the silt that gives French press its muddy reputation.
